Believe it or not, it is really easy to grow black eye peas in Florida! So, I had a bunch of them in mason jars from last year and decided it was time to use some. I started with this recipe: Southern Black Eyed Peas Recipe – Immaculate Bites https://share.google/tNA8dl9beLVLZC5Nh.
I made several changes. This is a great recipe that you can make your own. Admittedly, I like spicy, my husband not so much. I added 2 jalapenos instead of the 1 optional jalapeno (we grow them our garden too). My husband was like “oh my” this is so spicy! So, I added cream of chicken soup and potatoes to this recipe, and it became this wonderful stew which can be nicely served with rice pilaf.
We didn’t have collards, but I had some fresh spinach that needed to be used up. I would put have put kale in if I had it (my husband doesn’t like kale but also grows great here in Florida) but he’s cool with it in this type of recipe.
So, I guess what I’m saying is – make this your own recipe! You can also freeze this and eat it at a later time.
